What is the difference between raw Pu'er tea and cooked Pu'er tea?

Pu'er tea is divided into raw tea and cooked tea, and the difference between the two is quite big:

From the perspective of technology: raw tea is Pu'er tea that has not been fermented, while cooked tea is fermented by artificial "pile fermentation" technology. Simply put, raw tea is a young girl, and cooked tea is a wife.

In terms of aging: raw tea has greater aging value. Under reasonable storage conditions, it can be stored for decades or even hundreds of years, while cooked tea cannot be stored for that long. The old tea mentioned in the market mostly refers to raw tea, but raw tea will never be stored as cooked tea. The reason for this misunderstanding is that the tea soup of Pu'er raw tea stored for a long time will turn red.

In terms of drinking history: raw tea has a long history of drinking, while cooked tea was created in the 1970s. Its appearance is to simulate the aging taste of raw tea.

In terms of tea soup and taste: the color of cooked tea soup is reddish brown, while the color of raw tea soup is lighter and yellow-green (excluding old tea); the taste of raw tea is stronger than that of green tea, and it is easy to produce bitterness. The taste of cooked tea is as mellow, rich and mild as black tea.

Why is Pu'er cake tea also called seven-piece cake? How was the weight of 357 grams of a cake established?

In the old days, the Qing government stipulated that "Yunnan merchants sell tea at a price of seven yuan per tube." According to the weight at that time, one cake of Pu'er tea weighed 357 grams, and seven cakes of Pu'er tea cakes made up one tube, which weighed about 2.5 kilograms. Twelve tubes made up one piece, which weighed about 30 kilograms. When a caravan transported two pieces, one horse carried exactly 60 kilograms. It was very convenient for both tax payment and transaction, so it is still used today.

There is another saying: In order to export 30 kilograms of Pu'er tea per piece, the China Native Produce and Animal By-products Import and Export Company packaged each piece into 12 tubes per dozen according to international practice, with 7 cakes per tube, and each cake weighed 357 grams.

In the early 1970s, the Yunnan Tea Import and Export Company hoped to find a more appealing and more conducive name for publicity and promotion. They called Pu'er tea "Seven Cake Tea", and the name of Seven Cake Tea was also spread.

What shapes does Pu'er tea have?

In addition to loose tea, cake tea, and brick tea, common Pu'er tea shapes include Tuo tea, mini Tuo tea, column tea, and golden pumpkin tea.

What are the numbers 7572, 7542, etc. commonly used to refer to Pu'er tea?

These numbers are actually marks, and the word "mark" is a transliteration of the English word "mark", which means a marking number.

The Pu'er tea mark is marked like this - the first two digits indicate the blending method used in this tea, the third digit is the main raw tea grade of the raw material (the larger the number, the lower the grade), and the fourth digit is the number of the tea factory (Kunming Tea Factory is 1, Menghai Tea Factory is 2, Xiaguan Tea Factory is 3, and Pu'er Tea Factory is 4).

Let's take an example: 7572 means the formula used is from 1975, the main raw tea grade is 7, and the tea factory is Menghai Tea Factory.

Loose tea actually has a mark, but unlike cake tea, it is 5 digits, and the raw tea grade is indicated by two digits.

How should Pu'er tea be stored at home?

It is not difficult to store Pu'er tea. Just pay attention to light avoidance and ventilation, as well as suitable and stable temperature and humidity. For example, it can be placed in a drying cabinet at home. If conditions permit, it can also be placed in a special purple clay jar or porcelain jar or tin can.

However, before storage, check whether the outer packaging meets the storage standards, such as whether the packaging is tight, whether it is plastic packaging (plastic packaging is not conducive to the storage of Pu'er tea), etc. If it does not meet the storage conditions, it needs to be repackaged. In addition, it is necessary to isolate items with odors to prevent the tea from "absorbing odors".

What are dry warehouses and wet warehouses? Why is it best not to buy wet warehouse tea?

Dry storage refers to a relatively dry, light-proof and breathable storage environment; wet storage refers to a high temperature and humid storage environment.

Since it takes a long time for dry storage tea to age, in order to quickly ferment the tea leaves, people have developed a wet storage technology called "pulling up seedlings to help them grow" in order to accelerate the maturation of Pu'er tea. However, due to insufficient control over humidity and temperature, many wet storage teas are prone to mildew and decay, which can cause certain harm to the human body, so it is best not to buy wet storage tea when buying tea.

How do you distinguish between the two?

When buying tea, you can carefully observe the appearance of the dry tea - the dry tea of the dry storage tea is oily in color and has clear leaf stems, while the dry tea of the wet storage tea is dull in color and has condensed strips. In addition, the most important thing is to taste it. The tea soup of dry warehouse tea is natural, with a little warehouse smell at most (similar to the dusty smell, which will disappear after reasonable storage), and the smell of wet warehouse tea is musty and rotten, and some will even cause uncomfortable throat lock (there seems to be a foreign body in the throat).

What is ancient tree tea?
